Catching Up

Life has gotten really busy lately. Even though I am in the midst of project as always, a lot has been left undone. The kids are growing fast and it seems that this just goes so quickly that if I  get too preoccupied with things that are fun but not as important, I feel I will be missing so much of these short, busy years with them. A lot has happened in The Family Fun Spot Family.
First, if you are reader of this blog you know that I blog a lot about my home country of Uruguay. Well, this past month I became a United States citizen. I used to have conflicting feelings about this because I used to think that I was sort of betraying my country for doing this. After some “emotional work,” I realized that those thoughts were not true. I will probably live here for the rest of my life, and even though it is true that I was not born here, my family was. My husband, our wedding, the kids…all american. So I call Uruguay my home country and the U.S.A my “adoptive” country that I love so much. I love everything about America and I am proud to be an american citizen. I just wanted to share this with you. If you are unaware of the naturalization process, it requires passing a government, history and civics test and doing an oath.

We celebrated important milestones in our family.
Our middle son turned 8! He got baptized and became a member of the Church of Jesus Christ of Latter-Day Saints.

We had a luncheon at church with our friends. My son shared his baptism with another friend, a girl born only two weeks after him.

We also had the Pinewood Derby. A little bittersweet since it was my oldest son’s last one and my younger son’s first one!

And many, many more things! We are also in the middle of planning our vacation. I am so excited about that! To top it off, we are switching the kids’ rooms so you know what that means…makeovers! Stay tuned for that. Each child will have his or her own bedroom. For now, feast you eyes upon the inspiration for the changes (and yes, they will not look EXACTLY like this but kind of similar (the thrifty way)

Italian Wedding Soup

This is by far my favorite kind of soup! I made my own lighter and healthier version by adding more vegetables and homemade turkey meatballs. I always use reduced sodium broth so I can control the amount of salt in a dish. For this recipe, I used the “Fit and Active” brand from Aldi’s. I also love this dish because it is simple and it can be cooked in one pot! My family of 5 ate for one night (my husband and I had seconds) and we still have left over for lunches!
Ingredients:
For the meatballs
  • 1 container of lean ground turkey
  • 1 tsp italian seasoning
  • 1 tsp garlic powder
  • salt and pepper to taste
  • 1/2 cup italian seasoned breadcrumbs (if the meatballs still are hard to mold you can always use more breadcrumbs)
  • 2 TBSP grated parmesan
  • splash of Worcestershire sauce
  • 1 egg
  • olive oil for sauteing
Combine all ingredients, do not overmix. Using a teaspoon of meat mixture, shape into a ball. Sautee in EVOO but do not cook through . This makes them super tasty!
For the Soup:
  • 3 containers of reduced sodium, no MSG chicken broth (I use the ones that have a lid so if there are any that is left I keep in the fridge)
  • 1 zucchini
  • 1/2 onion, cut
  • 3 carrots, peeled and diced
  • 2 celery stalks, cut
  • 1 can of rinsed cannellini beans
  • salt and pepper
  • 1 tsp of italian seasoning
  • 1 cup pf baby spinach
  • 1 cup of acini di pepe pasta
In the same pot that you cooked the meatballs, set them aside in paper towels. Add a little bit more of EVOO and add all the veggies. Cook until onions become translucent. Add the broth and get to a boil. Reduce heat and add pasta. Cook for about 10 minutes and add the meatballs and beans to finish cooking. Add salt, pepper and italian seasoning. Add the spinach until it wilts. Serve with crusty bread and you got a yummy, healthy meal!

This is the only reason I like cold weather!

New Year, New Me

One of my goals this year is to be healthier and to increase my daily exercise. I really wanted to include more veggies and fruits in my meals, but in my case I find it hard to do. I got a Nutribullet and let me tell you this product is amazing! (and no, this is NOT a sponsored post and I am not receiving anything for this) I started in the beginning of January including two Nutriblasts a day, especially in the morning. The product comes with a booklet that you can experiment with different fruits and vegetables and also seeds for “boost.” My husband and I also create our own. I am already feeling better. I sleep better and have more energy. I went to the health store and bought Hemp seeds, Chia seeds and Maca powder. These three products are super healthy, even though they are not very cheap, but they are full of nutrients. Maca powder I use especially to regulate my hormones since I have at times hormonal imbalance AND helps with mood too, just sayin’!

These are some of my favorite smoothies:
spinach, one banana, one apple, one pear, chia seeds, water.
spinach, blueberries, one apple, one banana, walnuts, water.
mixed greens, one peach, blueberries, banana, tsp maca powder, water.
mixed greens, mixed berries, a pear, hemp seeds, water.
Frozen banana + almond milk+little cinnamon= AMAZING DESSERT!!

 For my exercise I chose yoga and Zumba, which I do at home. My husband does Insanity and it is great but I find it really hard to do. Since I am latina I love to dance and I love the music included in Zumba. Also being a Dental Hygienist is not good for my back, and sometimes I come from work with back pain.Yoga helps with that because of all the stretching.
