Chicken Pita Pockets

We absolutely love gyros and Greek food…Opa! Yes, “My Big Fat Greek Wedding” in one of my all-time favorite movies to watch! I can’t get enough of Mr. Portocalos (that, by the way, comes for the Greek Portocala, which means “orange”) LOL! Anyway, I know Gyros are not the healthiest options. The ones that we eat are full of grease but once in a while they taste super good. I love to cook healthy meals for my family and because there is a history of heart disease in my husband’s family I like to take good care of him. So I always “invent” healthier options inspired from other sometimes rather unhealthier alternatives!
I saw in Pinterest several recipes and researched on some ingredients. I experimented this recipe with ingredients that are used in Greek recipes, such as Tatziki sauce, yogurt, oregano, herbs.
I got 3 big chicken breasts and cut them half wise, and then I prepared a marinade consisting of:

  • 3 TBSP of olive oil
  • 1/2 cup PLAIN yogurt
  • salt to taste (for us, about a teaspoon)
  • 1 tsp of oregano
  • 1/2 tsp pf ALLSPICE
  • 2 garlic cloves, minced
  • 1/2 teaspoon of lemon pepper
I marinated them for 2 hours. I then prepared the ingredients to go with the pita pockets:
  • 1/2 red bell pepper
  • 1/2 onion
Since my husband and I do not like raw onions, I sauteed them:
I then prepared the Tatziki sauce, my version:
  • 1 1/2 cup plain yogurt
  • 1/2 a cucumber, shredded
  • salt and pepper to taste
  • 1/2 teaspoon garlic powder
  • 1 teaspoon lemon juice
  • optional, mint (since we did not have this, we used parsley and it tasted good)
You just mix everything and let it rest while the chicken is being grilled:

You can cook it in the pan if you want, but I HIGHLY recommend the grilling. It can also be put in the crock pot with the marinade and cook for 4 hours or so, you’ll have shredded chicken instead!
Then I cut the chicken in small pieces. The pitas have to be warmed up before cutting, so I put them on the grill for a couple of minutes, and cut them in half. Then I stuffed them with the chicken, the onions and peeper, and I also cut some tomatoes too. Then I put some Tatziki sauce on the top. I made some brown rice to go with it.
The family approved. This one is a keeper.
